After cooking thinly sliced red onion in oil, add chunks of potato and then follow up with chicken, curry powder and crushed tomatoes. Normally finished with water but chicken or vegetable stock can provide extra flavour. When the potatoes are cooked so is your meal. Garnish with coriander and serve with fluffy basmati rice, sour cream, cucumber slices and roti’s.
